Bananas Foster Oats Because everyone should turn their favorite dessert into breakfast every once in a while. The first time I ever heard the words, “bananas foster” was when I was going to the quick shop in college to get a sugar laden slushy type drink with my roomate. She was a true G.R.I.T.S. (yep, a Girl Raised In The South) in every sense of the word. Imagine the team we were a — me, a Northern Ohio Girl…may as well been Canadian and a girl from South Carolina. Quite the pair! During one of our many trips to get a sugar laden slushy type drink we were talking about our favorite desserts and I honestly cannot remember what mine was. I probably said something very classy like a DQ Blizzard or something like that. Her favorite, bananas foster. I never heard of it and I asked her what it was. As she described it I drifted off into a daydream and imagined that I was eating it. The last thing I heard was…if you like caramel and bananas you’ll like it. Say no more! I had to have it and I did, 3 years later. Such a long time to wait but when you are living on a college campus you don’t exactly have restaurants that serve bananas foster for dessert on the regular.

Vegan, gluten-free, nut-free, soy-free, refined sugar-free
Serves: 2

Ingredients

Instructions

  1. Add the water and oats to a 3 quart sauce pan and bring to a boil
  2. Once boiling stir, place a lid on the pot and move to a cool burner
  3. Heat skillet on medium high and cut banana into 1/4-1/2 inch pieces
  4. Sprinkle banana pieces with coconut sugar and ground cinnamon, place on skillet until both sides of the banana are caramelized
  5. Gently pour the milk into the pan of oats and stir
  6. Spoon oatmeal into a bowl and top with bananas, golden berries and fresh raspberries
