I mean…’donut’ get me started on all of the reasons why we love donuts in our house. As a kid, I grew up with one of my parents, usually my dad getting up before me and my sisters and going down to Neff’s Bakery. Neff’s is one of those ‘places’ and the delicious aroma and quaintness of the bakery always screamed nostalgia and everyone who grew up in small town Ohio will remember it. My sisters and I would rise to the smell of donuts…a dozen of all kinds and much like my typical self my favorite flavor changed like the color of my nail polish. Weekly!
Now that I look back on all of the fond memories one particular donut sticks out in my mind which was some sort of goodness covered in COCONUT! Yes, coconut. Not tropical, just scentful, creamy and delish!
Alas, I have created a favorite donut in our house. That is, for the coconut lovers. Coconut is one of those foods that is loved or loathed. My house is divided right down the middle. I, of course am on the love side.
Servings: Approximately 14 ounces
Pulse the coconut sugar and flour in blender to create a dry mix. Sift dry ingredients and mix in wet by hand. Coconut oil and lightly flour pan. Fill the donut molds in the pan up to the full line. Bake in a 375* oven for 10-12 minutes. Turn out on wire rack and glaze.
