Apple Peach Crumble I couldn’t let a weekend go by without making this quick, healthy and the highlight of most Georgian summers dessert…Apple Peach Crumble which combines the most delicious stone fruit with the classic midwest apple. It sounds a little like me, I guess born in the midwest and now I call the south my home. My babies were born here so I think automatically makes them southern?! Either way this crumble hits the mark every time while being dairy free, gluten free, nut free and refined sugar free.

This dessert also contains a pantry staple in my home which is, coconut sugar. Of course, any sugar can be used but since finding this a few years back in my local health foods store I have not used another sugar. Need a reason for stocking this in your pantry? It’s pretty simple, it tastes amazing and is the lowest of the sugars on the gylcemix index at 35 by comparison white sugar is rated as a GI 95. The low glycemix index rating helps control and level blood sugar so the dips are not as drastic as with white sugar.

Ingredients

Directions

  1. Preheat oven to 350*F
  2. Using finger tips, lightly coat the bottom of 9×9 oven safe dish with coconut oil
  3. Core then chop apples and peaches, leaving skin on
  4. Add apples and peaches to baking dish, sprinkle with 1/2 tsp cinnamon
  5. In a medium size bowl combine flour, oats, coconut sugar, 1/2 tsp cinnamon and vegan butter or coconut butter
  6. Using a fork to cut the mixture together to form a crumb topping
  7. Pour the crumb topping over the fruit and bake for 45 minutes
